GREENBERG STATION'S RESTAURANT-WORTHY FAMILY-APPROVED WHITE CHICKEN CHILI:
1-2 tbsp. olive oil
3 cloves garlic, pressed
1/3 - 1/2 cup diced red onion
2 green onions, thinly sliced
1/2 bottle Corona Light
2 broccoli stalks, peeled, cut into 1/4" discs, and quartered
1 bag frozen okra
1 can navy beans, with juice*
1 can cannellini beans, with juice*
1 can large butter beans, with juice*
1 can red kidney beans, drained & rinsed
2 lg cans chunk chicken, with broth*
*for low-sodium version, drain & rinse all & replace w 1-2 c water
cilantro (chopped fresh or paste)
several shakes salt, to taste
several shakes seasoned pepper, to taste
corn meal to thicken (1 or 2 tbsp??)
Heat oil and add garlic & onions to brown.
Add 1/2 bottle cerveza and green veggies -- cook til warmed.
Meanwhile, drink other half bottle... :-)
Add all white beans incl liquids.
Add drained & rinsed red kidney beans for color.
Add chicken & broth.
Add spices. Stir & heat over medium flame.
Add corn meal as necessary to thicken.
Simmer over low flame until heated through & components marry.
