We’re about to lean hard into our Filipino roots.
Filipino food, for me, is hands-down some of the best food on the planet. Why? Because it’s not just one culture — it’s many cultures in one pot. That’s the story of the Philippines and its food.
From Chinese and Japanese traders in the pre-Hispanic era…
to Spanish influence starting in the 1500s…
to American flavors brought during World War II —
the Philippine Islands became a true melting pot of world-class cuisine.
Now here’s where it gets personal.
I’m Filipino-American — born in the islands, but raised in the Appalachian mountains of West Virginia and Kentucky. This food truck is about bringing the taste of the islands together with the freshness of home — locally raised chicken, locally grown vegetables, and outdoor open-flame cooking.
Asian food is already well represented in our area, and we love that. Those trucks and restaurants have paved the way, and we respect them tremendously — we even highly recommend them.
What we’re excited to introduce is Filipino-American cuisine —
a unique blend of Southeast Asian flavors and Southern Appalachian home cooking.
