Our humble beginnings began in Austin, Texas and from an early age I was exposed to the unparalleled greatness of Central Texas Barbecue, specifically beef brisket and smoked sausage. As my career has taken me around the country, the only way I could satisfy my barbecue cravings was to cook it myself. During this time period I have tried different smokers, rubs and cooking methods and have now est

ablished a finely tuned process to produce a brisket and sausage that will satisfy the most demanding barbecue lover. I have been living in East Tennessee for almost fifteen years, cooking brisket, sausage, ribs, pulled pork, chicken and turkey for my friends and family and wanted to share my recipes and techniques to provide moist, tender and delicious prime beef brisket, along with rich smoked sausage to the people of East Tennessee. A meal from Taste-o-Texas will be a true dining experience, not just dinner at another barbecue restaurant. The food is prepared fresh daily with the highest quality ingredients to ensure consistent, delicious meals every time. I am committed to ensuring that the all of the barbecue that I prepare is tender, flavorful and satisfying.

Ryan always overflowed the mop bucket but I was guilty of overflowing the sink, well Ryan overflowed the sink from time to time too.
I sure will miss cleaning up messes with this guy! And making him clean up my messes too 🤭

The other big job done by our neighbors! And I almost forgot to mention how they brought us all the wood we used for the last 5 years too! The Clabough family truly is amazing!

I honestly don’t know what we would have done without our neighbors help! Not only did Darren break this down and set it up for us when we opened but he came out to do it again! This time was even harder because our big smoker has been used so much and caught fire 3 times in the last 5 years that the wheels were not able to be put back on so it had to be lifted and hauled!

Oh yeah and he arranged for our giant sign to be taken down which is another big job that I thought wasn’t possible to do! But nahh it’s all taken care of and we can now say we are officially done moving!

Thanx again to our super awesome neighbors for all your love and everything you do for us! I hope y’all know just how much we love ya guys!

What a beautiful day to be thankful!!!

We are thankful for our family and the opportunity that we were blessed with to have our own restaurant to meet all of you wonderful people. We sure are missing our mom (Margie Polley) today but we are so thankful that she was ours and for all the beautiful memories and love we shared!

We hope y’all have a wonderful Thanksgiving and thank you again for everything!

So…. We have been finding fun things to do with our time off while repurposing some things we have 🤭

I got Austin a RipStick this year for our anniversary. It’s like a skateboard but it only has 2 wheels and you wiggle to make it move. And yes he fell a couple times and got injured but he said it’s worth the risk. It’s probably the best gift I ever gave him because he is obsessed with it! He got me the big unicorn cat head mask for my birthday. We may be getting older but we still like to have fun.

Then along came Randi and her super sweet family! Randi has always been a pleasure to be around and work with and can always bring a smile to your face but when I see her children my heart truly melts! They always have a special picture colored for me or a big ole hug to give me that always brightens my day. And of course we all love Devin and making sure he gets all the leftovers or special foods we would prepare. I think his favorite was the mild salsa Mark made from veggies fresh out of our garden 🤭
