Here's a fun and easy way to hack a party or summer picnic: to go catering appetizer boxes. They're fun, simple, and an easy way to wow your guests.

Recipe of the Month: Tomato Salad with Bacon Vinaigrette - 8 Servings
Most people either have tomatoes coming out their ears in their summer gardens or have access to farm fresh tomatoes from a neighbor or farmer's market.
What do you do with that many tomatoes?
Make a tomato salad with onion, feta, bacon, and chives, of course.

Ingredients:
4 slices thick-cut bacon, chopped
1 small onion, chopped
3 Tbsp. sherry or red wine vinegar
2 tsp. Dijon mustard
2 Tbsp. mild, buttery olive oil (do not get a strong or grassy oil, the flavor will overpower the dish)
1 lb. Heirloom tomatoes, cut into wedges
1 oz. feta cheese, crumbled
Fresh chives, chopped
Directions:
Cook bacon in a medium skillet on medium heat, stirring occasionally, until crisp, 8 to 10 mins.
Transfer bacon to a paper-towel-lined plate ; pour off all but 2 Tbsp. of bacon grease. Add onion to pan.
Cook on low to medium heat, stirring occasionally until tender, 4 to 6 minutes.
Add vinegar and Dijon mustard; cook, scraping up any brown bits, until incorporated, 1 minute.
Remove from heat; whisk in olive oil. Arrange tomatoes on a platter and drizzle with vinaigrette. Top with chopped bacon, cheese, and chives.

Recipe of the Month: Frozen Watermelon Mules - 4 Servings
With the weather being so dang hot, it's nice to have a frozen drink to enjoy by the pool or just inside with the AC on. And this easy frozen mule can be made with a little prep and patience.
Ingredients:
4 cups Frozen Watermelon
1 cup Ginger Beer (not Ginger Ale, you want the stronger flavor, and the watermelon provides the sugar)
1/2 cup Vodka
1/4 cup lime juice
ice
mint leaves and lime slices for garnish

Directions:
Freeze four cups of cubed watermelon for no more than 4 hours (learn from my mistake and DO NOT freeze it overnight it will turn into a brick and be hard to break apart)
In a blender, combine the frozen watermelon cubes, ginger beer, vodka, and lime juice.
Pour into chilled/frozen glasses or copper mugs and garnish with mint leaves and lime slices.
Drink several responsibly!
Can be made without vodka for a child friendly watermelon slushy.

One thing I enjoy about coming into the bakery every morning is making scones and muffins. Every day we mix things up and bake something different. One day it'll be Apple Pie or Blueberry Ginger scones with Carrot Cake muffins, another will be Orange Blueberry muffins with Cherry Almond or Mocha Espresso scones. Banana muffins with berries, nuts, or chocolate chips, Double Chocolate-Chocolate Chip Walnut Cream Cheese Muffins... so many flavors, every day something new to look forward to!

We're in a Pineapple state of mind because it's hot and I'm hungry! It's just after the solstice aka the official start of summer. I'm not quite ready for the heat yet, but I'm craving the tropical sweets I can make in my own kitchen. Aka Agua de Piña, and frozen Pineapple Whip.

*Agua de Piña (Pineapple Agua Fresca)*
It is a very simple drink, all you need is a blender, ½ pineapple cut into large chunks, ¼ cup sugar or to taste (I taste my pineapple before making it so I don't oversweeten it), 6 cups of water, and ice. If my pineapple is TOO sweet, I add a splash of lemon juice.

How to make it:
Blend the pineapple and 4 cups of the water, then add sugar or lemon juice to taste. Mix in the remaining 2 cups of water and strain using either a fine sieve or cheesecloth. Chill or serve fresh over ice, refrigerate any left over.

*Frozen Pineapple Soft-Serve*
Ingredients:
1/2 cup pineapple juice
1 big scoop vanilla ice cream, (about 3/4 cup)
2 cups frozen pineapple chunks
2 tablespoons sugar, optional but recommended
splash of lemon juice
pinch of salt
Instructions:
Combine all the ingredients in a high-powered blender (in the order listed); blend until smooth and ultra creamy, pushing down the pineapple chunks if necessary, about 3 minutes.
Freeze the mixture for 40-50 minutes, then scoop like ice cream.
For a vegan alternative, use any vegan vanilla ice cream. I personally like SO Delicious's Coconut Milk vanilla ice cream. Super creamy and refreshing.

Dear Dad,
You've been my dad by choice for almost 32 years. 32. You've seen me grow up, taught me how to fish with chicken because we accidentally made our sandwiches all fizzy by using dry ice in the cooler. You were the best girl dad, you helped with my girl scout troop campout we did on the property - even going the extra mile to set up a badminton/ volleyball net for us to use for games. You instilled in me my love of history and my love of our heritage by letting me join you in doing historical reenactments, parades using your Jeep Kaiser ambulance (Bandage was so fun to ride in), and taking me to renaissance fairs.
You taught me how to drive and how to patch someone up.
So many memories, all of them painted with the colors of fond nostalgia and love. I know I wouldn't be who I am and have all the skills I know if you hadn't taught me two thirds of them and encouraged the learning of the rest.
Thank you for every memory and second you've been here with me.
I love you so much.

Much love to Jake and Bonnie on their wedding day at Villa Agave. Such a beautiful location for a special day, we are truly grateful to have played a part in making their event shine, with the gender reveal wedding cake being a first for us, so cool.
