National Pasta Day PSA: Our pasta is handmade in our kitchen in Bologna, Italy by “sfogline” who use traditional methods of sheeting and cutting — none of our pasta is extruded. It’s prepared fresh daily, using a type of egg that’s available only in Italy and is specially produced for pasta. The result is a superior noodle that is the foundation for our classic Italian dishes.

Bologna is the region of the sfogline, women who have spent a lifetime mastering the art of pasta making.

Our sfogline make the fresh pasta daily, using ingredients and expertise that only exist there.

Finding that expertise anywhere else is nearly impossible.

We overnight it (temperature-controlled) where the flight time is part of the needed resting time.

We source and regularly import nearly every ingredient in our recipes directly from Italy — from our tomatoes grown in Basilicata to our 24-month aged Parmigiano-Reggiano from Parma, and almost everything in between.
