A year ago, Chef Kim sent an email to The Lab and asked a pretty simple question: What would make you come to Sorry Not Sorry more often?

One member told us she loved salmon — and that if we had more fork-and-knife entrées, instead of so many burgers, tacos and handhelds, she'd have another reason to come in more often.

Fair.

So we listened.

We developed our Miso Glazed Salmon: salmon glazed with white miso, mirin and sake, finished with sesame oil, scallion relish and crispy shallots. Savory, silky, a little sweet, with all that crispy goodness on top.

We developed the Steak Frites around the same time.

And the people you're looking at in these photos? That's The Lab gathering at Sorry Not Sorry when we debuted both dishes and asked them what they thought.

And yes — the whole thing was complimentary.

They got a welcome cocktail, free-flowing w**e, and full-sized entrées because we genuinely wanted them to come eat, drink, hang out, and tell us what they thought.

That's what The Lab is supposed to be.

Not just another restaurant email list.

It's where we ask questions, try things, get your feedback, throw complimentary events, invite members into the restaurant for more personal gatherings with Chef Kim, and occasionally change the menu because one of you had a very good point.

Kimchi quesadillas are what happen when we stop pretending a quesadilla has to behave.

Spicy fermented kimchi. Melted Jack cheese. Sour cream and guacamole cooling everything back down. House salsa on the side. Then we cut it open while the cheese is still doing its thing.

It’s vegetarian. It’s gluten-free. And it is extremely Sorry Not Sorry: familiar enough to crave immediately, weird enough that you’re probably not making it at home.

Some steak dishes are about the size of the cut.

This one is about the bite.

We take ribeye cap — deeply marbled, ridiculously beefy, and one of the most flavorful parts of the ribeye — and char it hard so the edges get dark and caramelized while the inside stays juicy.

Then we finish it the Sorry Not Sorry way: with our Vietnamese shaking beef sauce. Savory, garlicky, a little sweet, a little tangy — and exactly the kind of sauce you start dragging your fries through once the steak is gone.

Now picture it:

You’re on the patio in West LA. There’s a cold cocktail in front of you. The Steak Frites hits the table still smelling like the grill, and everyone immediately reaches for a fry.

You were meeting for “just one drink.”
