I know what I’m having for lunch today. The local beet salad. With hints of fall in the air after epic lightning and fresh rain, this gorgeous beauty reminds us of all of summers bounty and foreshadows the end to the busy season. It’s all things zucchini this time of year, and leave it to Chef Christian to turn that zucchini into something truly magical. Spiralized fresh zucchini salad with tarragon rice wine vinegrette and heirloom cherry tomatoes from Faith Van De Putte.
