Might not be my best photo, but hopefully you’ll get the gist. This is kind of a regular around our house. Salmon over some risotto with roasted vegetables. Easy easy, easy to make. 😃And easy to make in all different ways and with all different flavors.
🔥 your starch does not have to be risotto. It can be rice or potatoes or nothing at all.
🔥 veggies you love. Today Rocketman wanted something Mediterranean style so I used asparagus, tomatoes, zucchini, lots of capers and lemon.
🔥 as far as the salmon goes, salmon just hosts so many health benefits so we tend to eat it a lot. I do buy a salmon from my local seafood guy, but you can get salmon from the grocery store, you can get it in the freezer section, from Costco. Don’t be afraid to season your salmon. I drizzle with lots of good olive oil and lemon juice and then I add garlic powder, salt, and pepper, liberally, paprika, and whatever herbs you want that day or have a taste for. Don’t be afraid to apply liberally. Especially if you think the kiddos will be fish adverse.👶👧
🔥 your salmon can be baked, pan fried, or grilled. You can buy a very large piece and bake that and have leftovers for the next night and you can use it the same way or you can make tacos, put it over a bed of greens and make a big salad, or throw on a bun with some tartar sauce and have a fish sandwich.
