Two weeks ago, when we announced the beginning of our Final Chapter, we hoped you would show up…
But to our absolute surprise and overwhelming joy—
YOU SHOWED UP… AND YOU SHOWED OUT! ❤️🙏🏼
You braved the Texas heat. You patiently waited through longer-than-usual wait times. You sat wherever we could find you a seat. You filled our patio, packed our dining room, ordered To-Go, and made sure you stopped by to see us one last time.
And please know…
That was not a small gesture.
Every visit. Every hug. Every kind word. Every familiar face. Every shared memory.
You turned our final two weeks into something more beautiful and memorable than Polo and I could have ever imagined.
Patios were full.
The dining room was full.
Bellies were full.
But most importantly… our hearts were overflowing with your love. ❤️
Yesterday, we served our final meal and closed the doors of Scotties-Bistro for the very last time.
There were tears. There were hugs. There was laughter. And there were emotions that words may never fully capture.
But if this chapter had to end…
We would not have wanted it to end any other way.
To our dearest friend Travis, thank you for standing beside us through this entire proud era & the final chapter. And to our incredible Bistro-Team, thank you for giving your hearts until the very last plate was served.
And to every person who ever walked through our doors—
Thank You.
From the bottom of our hearts, thank you for allowing us to serve you, support you, laugh with you, and become a small part of your lives.
The truth is, you were never just our Guests.
You became our friends.
You became our family.
And you became a part of our story.
And perhaps that is the beautiful thing about a legacy…
It doesn’t really end. It simply finds new ways to live on.
Somewhere down the road, we hope to put a little piece of Scotties-Bistro between the pages of a book—our food, our stories, our memories, and the recipes that helped make this place what it became.
Not today. Not tomorrow.
But someday.
Because some things are simply too meaningful to let them disappear when the doors close. ❤️
For now, we simply want to say—
Our doors may have closed… but our hearts have never been fuller.
