A Little Julia Child Inspiration, with a Colorado Twist!

It was love at first bite for the legendary Julia Child.

During her first meal in France, Julia discovered Sole Meunière—a beautifully simple dish of delicate fish, browned butter, and fresh lemon. That unforgettable experience helped ignite her lifelong passion for French cuisine and changed the way Americans thought about food.

At Bistro 36, we’re paying homage to that iconic French classic with a little Colorado flair.

Introducing our Colorado Trout Meunière!

Beautifully prepared trout, golden brown and finished with rich, nutty browned butter, bright lemon, and briny capers. Served alongside our fresh, house-made mashed potatoes, prepared daily in our kitchen.

Meet fall’s coziest salad.

Introducing our new Warm Camembert Dinner Salad — because some salads were never meant to be a side dish.

Warm, baked Camembert sits at the heart of this fall-inspired plate, surrounded by mixed greens, endive and radicchio tossed in a housemade sage vinaigrette, with crisp Pink Lady apples and browned butter pecans bringing the perfect balance of sweet, savory and crunch.

And because it’s Bistro 36, we finish it with our housemade sage & cheddar crackers — perfect for breaking apart and dipping into that warm Camembert. 🤌

We’re still thinking about the incredible evening we shared at Bistro 36 for our recent w**e dinner!

We were honored to welcome Lucca, Owner & Founder of Benito Vino , who joined us for the evening and personally guided our guests through an amazing lineup of w**es. His knowledge, stories, and passion for w**emaking made the experience truly special.

One of our favorite things about these dinners is bringing people together around the table — great food, incredible w**e, conversation, and the opportunity to learn directly from the people behind what’s in your glass.

At Bistro 36, we believe there’s something special about businesses built by the people who pour their hearts into them.

As an owner-operated restaurant, we’re proud to partner with another owner-operated business for an unforgettable evening of food, w**e, and storytelling.

On Wednesday, August 12 at 7:00 PM, we’re honored to welcome Luca Zanin, Founder & Owner of Bennett Valley Cellars, who will personally guide guests through each w**e, sharing the story behind the vineyard, his w**emaking philosophy, and why each selection was chosen to complement every course.

The weekend is here, and it’s the perfect time to spotlight one of our favorite summer entrées at Bistro 36. ☀️🍷

Our Provençal Chicken Thighs are everything summer dining should be—perfectly roasted, bone-in chicken thighs served over herbed rice and finished with a fragrant garlic white w**e reduction, fresh thyme, caramelized onions, and buttery Castelvetrano olives.

Light, flavorful, and made from scratch, it’s a dish that pairs beautifully with a glass of w**e on the patio or a relaxing dinner with friends.
