Our Story

Named after a tree used in ceremonies throughout the Mexican state of Oaxaca, Copal is a family owned restaurant serving progressive Mexican cuisine. Inspired by our own family recipes and indigenous flavors from Central and Southern Mexico, our menu is a fusion of pre-Hispanic fare and modern culinary trends. Every dish is made with high-quality, hard-to-find ingredients, all to bring the most authentic and freshest flavor with every bite. We’re proud to share our roots, our culture, and most of all, our cuisine with friends and neighbors in Lincoln.
