The line starts forming before dawn. By noon, it's over.

Snow's BBQ in Lexington, Texas is open one day a week: Saturday, 8 AM until sold out. Texas Monthly has crowned it the best barbecue in Texas twice. The New Yorker called it the best Texas barbecue in the world. And the pitmaster, Tootsie Tomanetz, is 91 years old and still working the pits every single Saturday.

She started cooking barbecue in the 1960s. Owner Kerry Bexley, nicknamed "Snowman" since he was a kid, opened the place in 2003, back when the Saturday hours were timed to the livestock auction down the road. The move is the brisket, post-oak-smoked with bark like candy. Or get the pork steak.

Plenty of barbecue spots chase hype seven days a week. Snow's does it in five hours.
