There’s a lot of articles circulating around about bbq joints taking brisket off the menu. We are paying more per lb now than ever before since being in business. We are selling at $34/lb and we don’t plan on increasing our price. With a smaller market being operational in Lexington, we feel like charging $40-50/lb for brisket like larger joints, we would price ourselves out of business. Brisket will always be on the menu.
Buy brisket from local joints but also try other meats like Turkey, Ribs, Pulled pork and most importantly sausage if they make it themselves. Profit margins are tight with brisket, buying other meats as well helps us out. There’s so much that goes into a platter of bbq behind the scenes and we are always going to do our best to put out the best bbq we can without cutting corners.
