Mystic Cafe Happy Day Restaurants was founded by Bruce and Joy Finch in 1969 to bring the freshest flavors and most dynamic guest experiences in the region to our local communities. Since the initial founding of Lewiston’s Taco Time

, Happy Day has grown to include 13 quick- and full-serve restaurants in Lewiston, ID, Clarkston, WA, and Moscow, ID, as well as catering & event production around the Inland Northwest. Happy Day holds tight to Bruce’s vision of high-quality products, exceptional service, and beautiful restaurants where our guests are comfortable gathering again and again. This dedication to excellence is recognized within our community as well as on the national level: Happy Day Restaurants was inducted into the Idaho Hall of Fame in 2016, and several of our Taco Time and Arby’s locations have won national distinction from their parent companies. This legacy is continued today by the hands-on leadership of Bruce’s son Tobe, Happy Day’s current president, and we are committed to refining our processes to meet the high standards set at our founding as we continue to grow. Meet the people behind your local food!🌽🐓🫐

Happy Day Local works with more than 20 producers from in and around the Valley, and this week’s newsletter introduces you to three of them: Wilson Banner Ranch, Klein Ventures, and Spring Valley Family Tree Farm.

We regret to inform you that one of Zany’s most popular dishes is… worthless. 🌮

No really, “birria” literally means “worthless.” But after five hours of slow cooking, a recipe perfected by Chef Nicolas Garcia, and more than 220 pounds prepared each week, we’d strongly disagree.

This isn’t your typical food story. It has conquistadors, goats, hangover cures, a social media love affair, and some seriously delicious tacos.

These days, Tuesdays and Thursdays are pretty special at our Happy Day Local warehouse!

Twice a week, producers from in and around the Valley stop by the warehouse and drop off their local harvest goods for us to purchase and send out to our restaurants.

And during the summer, there is SO much coming through those doors. 🍅🥬🥕 Hundreds of pounds of fresh produce can fill our storage twice a week, and before long, those same ingredients are showing up on dishes at restaurants around the Valley.

It has been so awesome to watch farms of all sizes around us step up and provide food for our community. Every delivery is also a reminder of our mission with Happy Day Local, to strengthen the Valley by building a more resilient local food system and putting fresh, sustainable and ethically sourced ingredients first.

There’s a lot that happens between a local harvest and the meal that ends up on your table, and Tuesdays and Thursdays give us a pretty cool look at a step in the journey.

If you’ve been following along with our timeline stories, it’s time to talk about Main Street Grill! Opened in January 2000, it comes next in our story following the Moscow and Lewiston A&W locations in 1999.

Originally opened as “Who’s on First,” the restaurant featured an iconic baseball theme, a limited menu, and just 25 barstools surrounding the kitchen. It was truly fun little grill tucked away in downtown Lewiston.

A lot has changed over the years, from expanding the restaurant and growing the menu to completing a fresh remodel just this year, but the memories and history remain.

Back in April, our quick serve locations came together for a drive-thru fundraiser benefiting the Boys & Girls Clubs of the Lewis Clark Valley.

Thanks to so many of you choosing to round up your purchase or make a donation while grabbing a bite to eat, $18,610 was raised for local kids. What an incredible show of community support!

A special congratulations to our Lewiston Taco Time team, who raised the most donations out of all eight participating locations 👏🏼

The local harvest has begun trickling into our restaurants! 🌱🍅

In last week’s Happy Hour newsletter, we share an update as harvest season begins to roll out here in the valley. This year’s season has kicked off with Don Groseclose, of Don’s Produce in the Lewiston Orchards, whose fresh produce is making its way into our kitchens.

There’s much more local flavor to come, and we are continuing to enjoy Happy Day Local grow by connecting the community to the farms around us.
