Mystic Cafe Happy Day Restaurants was founded by Bruce and Joy Finch in 1969 to bring the freshest flavors and most dynamic guest experiences in the region to our local communities. Since the initial founding of Lewiston’s Taco Time

, Happy Day has grown to include 13 quick- and full-serve restaurants in Lewiston, ID, Clarkston, WA, and Moscow, ID, as well as catering & event production around the Inland Northwest. Happy Day holds tight to Bruce’s vision of high-quality products, exceptional service, and beautiful restaurants where our guests are comfortable gathering again and again. This dedication to excellence is recognized within our community as well as on the national level: Happy Day Restaurants was inducted into the Idaho Hall of Fame in 2016, and several of our Taco Time and Arby’s locations have won national distinction from their parent companies. This legacy is continued today by the hands-on leadership of Bruce’s son Tobe, Happy Day’s current president, and we are committed to refining our processes to meet the high standards set at our founding as we continue to grow. For much of her career, Shayanne Currie has worked in loud, colorful environments. So, when she came into the corporate office life, it was a bit daunting.

Shay left behind the decorated bulletin boards and high energy lifestyle of an early childhood educator and stepped into the browns and grays of the 9-5 lifestyle.

Only seven months into this new position, she has already left a permanent mark on not only everyone around her, but the structure and routines of the business as well.

As we launch our new segment, The Heart Behind Happy Day, we found it only fitting to begin with the first face you see here at Happy Day’s corporate office.

One of our favorite things to talk about as a company is how Happy Day Local continues to grow and evolve in our journey toward bringing more local food into kitchens across the Valley.

A few weeks ago, we hosted our first Regional Growers Summit at our distribution facility, bringing producers together to show how their summer harvest can move through our system and into our restaurants (and eventually into retail outlets). It was an exciting look at what’s ahead.

And this summer, that vision starts becoming reality with fresh local produce from more than a dozen regional growers and producers.

Now that all the Cinco chaos wraps up, we thought it would be fun to peel back the curtain on how it would be even possible to make 25,975 tacos in one day.

Some traditions are planned, but others just happen. Cinco de Mayo at TacoTime is one of those stories.

What started as a completely unexpected rush of people turned into something much bigger than any one promotion or idea. Year after year, more people showed up, the lines got longer, the crews worked harder, and before long it became a true Valley tradition.

By 2016, our TacoTime locations were serving over 45,000 crisp tacos in a single day, a record that still stands today, with crews frying taco shells per order just to keep up with the demand.

For 26 years, Main Street Grill has been cooking up classics and serving smiles in beautiful downtown Lewiston.

But over the past few months, something exciting has been taking shape.

Since late January, the Grill has been on a much-needed remodel journey, one that’s bringing fresh energy to a place so many people know and love. In this week’s newsletter, we’re giving you an inside look at the progress and what’s been happening behind the scenes.

There’s still a list to be done, but with the help of the Happy Day Maintenance team, Michell & her staff at Clever Fox Architecture, and the talented staff at Flerchinger electric, the job is closer to the finish line! 🚧

Our Happy Day Local Bakery is officially in full swing! After months of experimenting and perfecting recipes, our bakery team has created a growing catalog of fresh, high quality products for our restaurants.

In this week’s newsletter, we are excited to introduce the team that has been paving the way behind the scenes.

You can already enjoy their work across our locations, from the breads on the tables at Tomato Bros, sandwiches at Southway Pizzeria and Main Street Grill, toasts at Mystic Café, and more!. And do not miss out on their desserts, including cinnamon rolls and sticky buns, available at Mystic and Main Street.

Freshly baked bread is just the beginning. Building our own bakery gives us control over our ingredients, reduces reliance on preservatives, and raises the quality of everything we serve, without having to rely on outside suppliers to do it for us.
