Two Cheese Enchiladas with Chile Con Carne Sauce & All-Beef Tamales
This hearty Mexican-inspired dinner brings together cheesy enchiladas smothered in a rich chile con carne sauce with tender, savory beef tamales. Add fluffy rice and creamy refried beans, and you’ve got a plate that feels like a full family feast.
Melted cheese, smoky chile flavor, and tender masa come together in every bite. It’s the kind of comfort food that begs for an extra spoonful of sauce.
Ingredients
For the Two Cheese Enchiladas
12 small corn or flour tortillas
2 cups shredded sharp cheddar cheese
2 cups shredded Monterey Jack cheese
2 cups Chile Con Carne sauce
½ cup chopped fresh cilantro, optional
½ cup sour cream, optional
For the Chile Con Carne Sauce
1 lb ground beef
1 tbsp cooking oil
½ onion, finely chopped
2 garlic cloves, minced
1 can (15 oz) tomato sauce
1 cup beef stock
2 tbsp chili powder
1 tsp ground cumin
½ tsp smoked paprika
Salt and black pepper, to taste
For the All-Beef Tamales
2 cups masa harina
1 cup chicken or beef stock
½ cup vegetable oil or lard
1 lb ground beef, cooked and seasoned
12–15 dried corn husks, soaked in warm water
For the Rice and Refried Beans
2 cups cooked white rice
1 can (15 oz) refried beans, warmed
Instructions
Make the chile con carne sauce: Heat the oil in a medium skillet over medium heat. Add the ground beef, breaking it apart as it cooks. Add the onion and garlic and cook until the beef is browned and the onion is tender.
Simmer the sauce: Stir in the tomato sauce, beef stock, chili powder, cumin, smoked paprika, salt, and black pepper. Reduce the heat and simmer for 15–20 minutes, stirring occasionally, until slightly thickened. Set aside.
Prepare the masa: In a large bowl, combine the masa harina, stock, and vegetable oil or lard. Mix until the dough is smooth, soft, and pliable. If it feels dry, add a little more stock, one tablespoon at a time.
Assemble the tamales: Drain the soaked corn husks and pat them lightly dry. Spread a thin layer of masa onto each husk, leaving space around the edges. Place a spoonful of seasoned ground beef in the center.
Fold the tamales: Fold the sides of the husk toward the center over the filling, then fold the narrow bottom portion upward. Repeat with the remaining husks, masa, and beef.
Steam the tamales: Arrange the tamales upright in a steamer with the folded ends facing down. Cover and steam for 1½–2 hours, checking occasionally and adding more hot water to the steamer when necessary. The tamales are ready when the masa firms up and pulls away easily from the husk.
Prepare the enchiladas: Preheat the oven to 375°F. Spread ½ cup of chile con carne sauce across the bottom of a baking dish.
Warm the tortillas: Briefly warm the tortillas in a skillet or microwave until soft and flexible.
Fill and roll: Combine the cheddar and Monterey Jack cheeses. Place some of the cheese mixture down the center of each tortilla, then roll tightly and place seam-side down in the baking dish.
Add the sauce: Pour the remaining chile con carne sauce evenly over the enchiladas, making sure the tortillas are well covered.
Bake: Bake for 20–25 minutes, until the sauce is bubbling and the cheese is completely melted.
Warm the sides: While the enchiladas bake, warm the refried beans and cooked rice.
Serve: Place the enchiladas on plates alongside an all-beef tamale, a scoop of rice, and refried beans. Garnish with cilantro and a dollop of sour cream if desired.
