The things we do for those we appreciate!! These Optimist Blend coffee beans have been aging for four weeks in our Lemont barrel pick event Bourbon barrel. Hardest part was shaking them free and now to dry them a little more in open air and hand sort any bad beans, char pieces, or any other individual details not wanted in the roast! In two weeks I’ll be doing it all over again for Roselle and St. Charles. Thank you for supporting this coffee journey, our spirits, and of course our 🍺!

It’s simple but necessary! Gotta keep the green coffee beans movin’ while barrel aging to evenly breathe in the residual aromas and flavors of the barrel. Extra time and patience will be required to make this blend great!
