Chicago already had its hot dog, its Italian beef, and its deep-dish pizza.
Then a Boricua in Humboldt Park looked at the green plantain and saw something Chicago hadn’t seen before: bread.
In the mid-1990s, Juan C. Figueroa of Borinquen Restaurant helped turn an idea rooted in Puerto Rican food culture into the sandwich Chicago came to know as the jibarito: crispy flattened green plantains surrounding steak, cheese, lettuce, tomato, mayonnaise, and plenty of garlic.
And that is one of the things I love most about the Puerto Rican diaspora.
Boricuas didn’t simply leave Puerto Rico and try to freeze everything exactly as it had been. They adapted. They created. They took what tasted like home and let a new city become part of the story.
The jibarito became deeply connected to Chicago’s Puerto Rican community, especially Humboldt Park.
And that matters.
Because Puerto Rican food made in Chicago is not somehow less Puerto Rican because it wasn’t created on the island.
The address changed. The Boricua imagination didn’t.
For this card, I’m using a home-style bistec jibarito: twice-fried green plantains, thin steak and onions, cheese, lettuce, tomato, and garlic mayo.
Chicago Boricuas, I want to hear from you:
Which restaurant made the jibarito you still compare every other one against?
Share this with somebody from Humboldt Park—or with the person who needs reminding that Puerto Rican history didn’t stop at the shoreline.
Save this one for the next time you have a couple of green plantains waiting on the counter.
