Ten Years ✨
It’s hard to believe we’ve been in the restaurant for a decade.
About twelve years ago, when we first told people we wanted to open a food truck in Catskill... we got laughed at. 😂 Food trucks weren’t really a thing here yet, and we didn’t do a very good job trying to convince anyone. We’d never even worked in a food truck before!
So… we did it anyway. And we had no idea if anyone would come.
Back then, Gracie’s was less of a business and more just me and Andrew trying to make it through each day and keep paying our bills.
Andrew ground every burger, made the cheese, pickles, and ketchup, and cooked all your food to order himself.
I baked every burger bun, made the donuts, mixed the soda syrups, poured your drinks, took your order, and probably stood there chatting with you while you waited.
We didn’t really know where any of this would lead.
When we started Gracie’s, our goal was pretty simple.
Make good food.
Work hard.
Make people happy.
Today, ten years into the restaurant, it’s SO much bigger than that. I still catch myself looking at Andrew on a busy day and saying, “Can you believe people actually come here?”
It probably sounds silly after ten years, but it’s true.
Seeing a full dining room, reading your kind reviews, watching people celebrate birthdays, weddings, anniversaries, baby showers, first dates, or just grabbing breakfast with friends... it still amazes me. And we’re open 7 days now?! What?!
We’ve watched friendships turn into families. We’ve employed siblings, parents and kids, husbands and wives. Some of our team have been with us almost since day one, and so many of them have helped shape Gracie’s into what it is today.
Thank you for giving us the chance to do this. Thank you for letting us be a small part of your lives. Thank you for forgiving our mistakes, and for continuing to support independent restaurants! not just ours, but all of the local businesses that make our community special.
Here’s to ten years.
