숯 (sut) means charcoal. 불 (bul) means fire. Put them together and you get sutbul, the soul of real Korean BBQ. Long before gas lines and electric grills, this is how Korea cooked its meat: over glowing charcoal that wraps every cut in a deep, smoky flavor nothing else can copy.

Here’s what most people don’t know. In Florida, almost every BBQ spot you’ll find runs on gas or electric. Why? Because real charcoal grilling is incredibly hard to permit. The fire codes, the ventilation requirements, the safety inspections… most restaurants give up and switch to gas before they ever light a coal.

Not Gabose.

For over 26 years, we’ve kept 7 tables fired by real charcoal, the only charcoal Korean BBQ in all of Florida. Every table, every meal, cooked the way it was meant to be: over flame, not a switch. Together: 불고기 — fire meat. Simple. Direct. Ancient.

No recipe name has ever been more truthful.

The story of Bulgogi goes back over 2,000 years to the Goguryeo era , warriors of the Maek tribe who grilled meat over open flame on skewers after the hunt. Tomb murals from that era show exactly that: meat, fire, and people who understood that those two things together needed no explanation.

Over centuries the dish evolved. It went from warrior food to royal table , thinly sliced, marinated in soy sauce, pear juice, garlic, and sesame oil, then charbroiled for the kings of the Joseon Dynasty under the name neobiani. From the battlefield to the palace. Still fire. Still meat.

Some things don’t need to be reinvented. They just need to be respected. 🔥🥩

Together: 해물파전 — a golden, crispy seafood scallion pancake that has been feeding Korean families for centuries.

This dish didn’t start in a fancy kitchen. It started in Dongnae, a coastal neighborhood in Busan, where fishermen and market vendors would bring together the freshest catch and the best local scallions and fry them up on market days. It was so good that it eventually made its way to the royal table during the Joseon Dynasty. From street market to the king’s court. That’s the power of real food.

In Korea there’s a saying “when it rains, you make jeon”. The sound of batter hitting a hot pan sounds just like raindrops hitting the ground. Comfort food with a soundtrack.

Together: 청포묵 a jelly so delicate and translucent it looks like solidified foam. Ancient. Intentional. Beautiful.
This is not a trendy ingredient. This is Korean royalty food.
Cheongpomuk is a soft, silky jelly made from mung bean starch , one of the oldest ingredients in Korean cuisine. It was a staple of Korean royal court cooking, served at celebrations, weddings, and special occasions. A king once named an entire political harmony policy after a dish built around it, that’s how deeply this ingredient is woven into Korean culture.

Mandu first appeared in Korea during the Goryeo dynasty, originally a dish reserved for royalty. We’re still treating it that way.

Filled with beef, pork, tofu, and vegetables like onions, chives, mushrooms, and minced garlic , every fold is intentional. Every bite is earned.
