Making eggplant 🍆 parm. Yes it's fresh not frozen, yes I took the time to take the skin off and yes it's fried in olive oil. This eggplant fried up nice and crisp because I also took the time to properly dehydrate the eggplant so it's not mushy. Fingers will be in the case tomorrow, Tuesday.
