Ancient Grain Spotlight: Einkorn

Einkorn is believed to be the oldest cultivated wheat in the world, dating back more than 10,000 years.

What makes einkorn truly unique is that it has a much simpler genetic structure than modern wheat. While most of today’s wheat has been hybridized over time, einkorn has remained largely unchanged. It’s a direct link to the earliest days of bread making.

Because of this, it behaves very differently in the kitchen.

Einkorn flour has a beautiful golden color and a flavor that’s often described as buttery, slightly sweet, and deeply rich. It brings a warmth to baked goods that’s hard to replicate with modern flour.

I’ve been using einkorn in cookies, where it really shines creating a soft, tender texture and incredible flavor.

When it comes to bread, einkorn is a bit more challenging. Its gluten structure is much more delicate, which means it doesn’t rise the same way as modern wheat. Doughs can feel softer, stickier, and require a gentler hand.

But that’s also part of what makes it so interesting.

It invites a different approach. One that’s slower, more intentional, and more connected to the grain itself.

Diving into einkorn bread is next on my list, and I’m excited to learn how to work with it more deeply.

Because grains like this aren’t just ingredients…

They’re part of the story of how bread has been made for thousands of years. 🌾

BIG ANNOUNCEMENT !!!!

Hello Lapeer ! We have huge news to share with all of you.

Grace & Butter Bakery, LLC. Is finally coming to Historic Downtown Lapeer!!!
we’ve been working very hard, bringing you breads, pastries, and cakes through the farmers market and through pop-ups in our community retail store Hummingbird House Designs LLC. Each week we have offered various things nowhere near what we will be bringing to you in a full scale commercial bakery. We will be at 240 W. Nepessing. We hope to be open by Summer as we are in buildout mode.
What does this mean for you?

1. You’re very own local downtown bakery that specializes in sourdough breads, European style, breads, and regional and international flavors not seen in this area.
2. We offer specialty cakes, wedding cakes, birthday and celebration cakes.
3. We also will be showcasing our artistry in beautiful pastries with unique flavor combinations along with the classics with over 20 years of professional experience.
4. We will have offerings daily that you can come in and pick out fresh baked breads and pastries made on the same day.
5. Our bakery is all scratch made. We use whole ingredients non GMO and Organic items. We will be using local farms for fruit and items on our menu to support our local farmers.
6. We don’t use any dyes in our foods. This means that when we make cakes and pastries, we don’t add anything but plant-based or fruit based colors. Orders can be placed if you do want traditional, colored frosting, etc..
7. We offer gluten-free and vegan options from breads to cakes. We will have a designated section in our kitchens, separated from everything else with its own oven and equipment specific to gluten-free. We are not certified for celiac, but we are striving to make products available to gluten sensitive customers.
8. We will be very involved in our downtown community, Farmers Market, Ladies Night Out and Winterfest, etc. We are community driven.
9. We are AFFORDABLE. Bread and desserts should be affordable for all.
