Good Morning from The Goats!

Here is a fun Client Favorite!! Enjoy with coffee ☕️ or tea 🫖.

Chef Dustie’s Easy! Favorite Puff Pastry 🥮 Baklava!!

Jump start high tea this weekend with this yummy and easy baklava recipe Enjoyed by many clients!!

Preheat oven to 375 degrees F.

Make simple syrup on stove using:

1.5 cups, water
1/3 c Rose Water
2 cups Sugar

Bring to simmer and light boil, remove from heat/burner set aside.

In medium bowl mix;
1 cup, chopped pistachios
1 cup, chopped walnuts
1.5tsp. Apple Pie Spice
1/2 cup brown sugar
1/2 cup raw honey
1 stick butter (unsalted)

In a square 6x6 or 8x8 butter all edges of pan, unroll 1 puff pastry crust, cover half of the pan making bottom layer, no need to cut crust for top simply, fill in your pan with the above mixture. And fold puff pastry to form a top crust layer sealing all sides.

With serrated knives, cut into diamond and triangle pieces, making sure you go through mixture and bottom layer prior to baking. Slowly pour the warm simple syrup over the cut layered baklava, and bake at 375 for 20 minutes or until golden brown top, and liquid soaked into the pastry.

Serve warm with vanilla bean ice cream 🍨.

Today was an ideal day for a hearty soup and a half of a Cuban sandwich. We have a deep appreciation for Cuban cuisine here. To prepare your own, you will require a light and airy bread roll. We utilize The Pizza Crust Co. in Lansing, MI, bread. Use one-quarter of the bread, butter the exterior, and apply horseradish mustard to each of the interior sides. Utilize smoked or braised pulled pork rump roast, shred and layer the roast, baby Swiss cheese, pickle slices (four to cover the cheese), one-quarter pound Black Forest ham, additional Swiss cheese, and pickles. Press in a panini press or griddle with olive oil for five minutes on each side. We hope you enjoy preparing it. You can find the bread at Kings World, located at 2000 block Kalamazoo St, and Clemons Ave, Lansing, MI 48912.

This week is anticipated to be the most hectic for travel, reunions, and culinary preparations, ultimately leading to the creation of lasting memories within the kitchen. Chef Dustie has graciously shared his recipe for mini spiced pumpkin pies, which we are delighted to share with you. May these tartlets infuse your home with a warm, inviting aroma.

Spiced Pumpkin Pie: yields 150 pies

Pastry:
2 lbs butter
5 cups all-purpose flour
2 teaspoons salt
1/2 tablespoon ground nutmeg

Pie Filling:
1 large jar pumpkin puree (3 cans)
2 cups sugar
1/2 cup brown sugar
1 can evaporated milk
1 can sweetened condensed milk
6 eggs
2 tbsp pumpkin pie spice
1 tsp allspice
3 tbsp Spanish vanilla (regular okay)

Combine all ingredients for the crust, refrigerate for 1 hour, then let rest at room temperature for 30 minutes before working the dough into muffin cups or tartlets.

Mix the pie filling as directed and fill each tartlet approximately 3/4 of the way.

Bake at 350 F for 15-20 minutes until firm.
