It was the honor of my lifetime to help get Olympia oyster shells into the Smithsonian National Museum of Natural History!

Thank you to Elliott Schafer and Swinomish Shellfish Company for growing these gorgeous, tiny, delicious creatures. Thank you to Nia Martin for photographing the dozen oysters we ate and cleaned. And thank you to Sarah Richardson and Katie Ahlfeld at the Smithsonian for reaching out and asking if I had shells to share.

PSA: I always have shells to share!

It feels strange in the best way — I ate these oysters, and now a piece of them is part of the Smithsonian's permanent collection. That's a wild thing to sit with.

A little Oly trivia: this is the only oyster native to the Pacific coast, once blanketing the shoreline from Baja to Alaska. Native communities up and down the coast ate them for thousands of years. They only get to about 2 inches across, but don't let the size fool you — the flavor is a coppery, mineral sweetness unlike any other oyster. By the early 1900s we'd basically wiped out the wild population between overharvesting and habitat loss, and the only reason we still get to eat and grow them is a handful of farms who never gave up on this oyster, combined with decades of restoration work.

Big respect to Puget Sound Restoration Fund for bringing this oyster back from the brink — they've restored over 140 acres of habitat across Puget Sound so far, and they're not slowing down. I believe our native West Coast oyster is the best-tasting oyster in the world, and that making art out of the shells — earrings, magnets, and pins — is a great way to get people caring about nature and issues like water quality, climate change, and labor rights.
