Theres a lot of work and dedication that goes into smoking meats while running an old school stick burner. From hand picking/chopping the best pieces of seasoned wood, going to the butcher to select only the finest cuts of meat to maintaining a fire/fire management. "Big Shirley" is a hand crafted old school smoker but it doesn't have electricity or any buttons that I can press to set the smoker at a certain temperature to stay there. It's up to me to build and maintain the fire while also making sure 👌 its always putting out clean smoke and not dirty smoke.

Shout out to Sweetie's Bar-B-Q for sending me his very own rib rub to try out! This man is an inspiration to me in the bbq industry. He's won numerous competitions and is even a Grand Champion in the rib category! This rub tastes amazingly delicious 😋 and I cant wait to smoke some ribs with it this weekend.

With the temperatures being this low and with nipsco prices on the rise, if you have a fire place and if you need some extra help, I will gladly give you some of my seasoned cherrywood or oak wood that I use for smoking meats.
