For a sushi chef, a knife is more than just a tool — it becomes an extension of the hand. The weight, balance, shape, length, steel, and intended purpose all matter. Every detail affects the precision of the cut, the texture of the fish, and ultimately, the experience of every bite.

That’s why we take the time to personally search for the right tools, learn from people who have dedicated their lives to the craft, ask questions, compare each knife, and choose with intention.

Because to us, quality isn’t only about buying the best ingredients. It’s about respecting every step of the process — from the knife in our chef’s hand to the final piece of sushi placed in front of you.

* Osaka: Sennichimae Doguyasuji Shopping Street (千日前道具屋筋商店街) — in Namba. It’s Osaka’s dedicated kitchenware street, especially good for knives, cookware, restaurant supplies, tableware, takoyaki/okonomiyaki equipment, and food-display supplies.

Today, we visited Doguyasuji in Osaka—Osaka’s famous kitchenware shopping street—to research and pick up equipment for our shop. The street is lined with specialty stores that have been supplying restaurants and food businesses with professional tools and equipment for generations.

We had the opportunity to speak directly with specialists who craft and sell Japanese knives, lanterns, noren, cookware, and other restaurant essentials. It was a great chance to learn more about the craftsmanship behind these items and bring home some authentic pieces and inspiration from Osaka for our own shop. One of my favorite moments at Kizu Wholesale Market in Osaka 🐟🇯🇵

Our owner chef isn’t from Osaka, so one of the most important parts of this research trip is talking directly with the people who know the local ingredients best.

We stopped to chat with a local fish market seller about uni (sea urchin) and learned about the different types they carry. He explained how uni can vary depending on where it comes from, color, size, sweetness, richness, texture, quality, and price. Another example is that we never liked ordering murasaki uni. However, the shop recommended we try since it tastes very good here. We gave it a try and confirmed it tastes very good here!

There’s only so much you can learn from a menu or a recipe. Talking with the people who work with these ingredients every day gives us a much deeper understanding of the food and the local culture behind it.

That’s what this trip is all about — asking questions, listening to the locals, learning, and bringing that knowledge and inspiration back to our kitchen. 🍣✨

Starting the morning at Kizu Wholesale Market (木津卸売市場 / Kizu Oroshiuri Ichiba) 🐟🇯🇵

One of our favorite stops on this food research trip. We loved this market because it feels much more local and authentic — less touristy, more about the real daily rhythm of Osaka’s chefs, restaurant owners, and vendors.

Walking through the seafood stalls, seeing the fresh fish, ingredients, and how everything is displayed gave us so much inspiration. Trips like this are one of our favorite ways to learn — tasting, observing, asking questions, and bringing new ideas back home.

Definitely a special morning in Osaka and a market we’d come back to again. 🍣🍜✨
