Here's the recipe for the Irish Soda Biscuits we used to make for St. Patrick's Day!
I still miss opening up and cooking for all of you, but honestly, not so much today. St. Patrick's day and the Corned Beef and Cabbage was really a pain in the ass. I'll be smiling an extra big Irish smile all day!

Irish Soda Bread is great but tends to fall apart when you try to slice it. The Good Steer solution? Irish Soda Biscuits! These great little biscuits are sure to be a hit. We will have them to serve on St. Patrick’s Day but here’s the recipe if you want to make them at home. Enjoy and Happy St. Patrick’s Day!
This recipe should make about 4 dozen biscuits.
3lb 12oz of Flour, 9oz of White Sugar, 3oz of Baking Powder, ¾ oz of Baking soda, 1 teaspoon of Kosher Salt, 8oz of Raisins, 1 tablespoon of whole caraway seeds, 8oz of Crisco shortening, 1 quart of Whole Milk.
For Icing, blend confectioners’ sugar and milk, very little at a time until you get your desired consistency.
Use a big bowl Mixer.
Place all ingredients except the milk in the mixer bowl. Attach dough hook. Start the mixer at the first speed and allow to mix dry for a half a minute. Add the milk fairly quickly and as soon as possible, turn the mixer to the second speed. Mix until it turns to a doughy mass trying to escape from the bowl. If the mix is too wet, add a wee bit more flour a little at a time. If too dry, add more milk. When done, remove from bowl and knead on a floured surface. Place dough in a large plastic bag and refrigerate. Overnight is best, 2 hours or so will do.
To prepare biscuits – Roll out dough on floured table to about ½ to 3/4 in. thick. Cut into biscuits with a biscuit popper (an empty can like a Campbell’s Soup can, opened on both ends makes a good Biscuit popper!) and lay out on tray with baker’s parchment. Bake at 350 for 15 to 20 minutes. Allow to cool a bit before icing.
