Did you know that there are two parts of a brisket?
The point is the juicier, fattier part on the thicker end of the meat. It is perfect for those who want a lot of flavor and aren't afraid of a little fat.
The flat is the leaner, thinner part of the meat, and although it isn't lacking any smoke flavor or tenderness, it is less fatty for those who prefer that.
We are happy to cut from the side you prefer, just mention it to the cutter in line!
