Featuring this week for WINE and OYSTER Thursday!!!

Domaine Guillaume Cabrol Picpoul de Pinet

is a crisp, refreshing French white wine from the coastal Languedoc region. The Cabrol family makes this wine at their four-generation estate in Castelnau-de-Guers. On the nose it has fresh citrus zest, green apple, and acacia blossoms note. On the palate it has lively acidity with flavors of grapefruit, white peach, and a salty mineral finish that make it a perfect match for this week’s oyster!

Chefs Creek Oysters

are premium Pacific oysters farmed in the nutrient-rich, swift tidal waters of Baynes Sound near Deep Bay on Vancouver Island, British Columbia, Canada. These are oysters that we loved so much the first time we had to get them back in! The flavor profile of these comes with mild salinity and that delightful, refreshing, briny cucumber finish with a smooth creamy texture that is out of this world!

Cranberry creek oysters
are premium Pacific Northwest oysters farmed in the cool waters of Washington State’s South Puget Sound

Starts with a bold, salty punch. They offer a clean, crisp bite and feature a slight sweet hint of honeydew melon. Perfectly paired with this week’s wine.

Hillick & Hobbs Dry Riesling
From Paul Hobbs’ Finger Lakes estate on the southeast slope of Seneca Lake, this Riesling captures the precision and purity that define cool-climate winemaking. Grown on steep shale-rich soils, the wine opens with aromas of white peach, lime blossom, and crushed slate. The palate is focused and electric, balancing vibrant acidity with a touch of texture from lees contact. Crisp, mineral, and impeccably structured.

Kusshi oysters are Grown on Stellar Bay’s cutting edge oyster farm in Deep Bay, British Columbia, Kusshis are raised in nutrient-rich Pacific Ocean waters, tumbled to strengthen the shell and give it its distinct, smooth appearance. This tumbling process achieves the desired deep, easy to open cup that holds within it the perfectly consistent, plump, firm, and delicious bites of oyster. Umm hmm. We’re pairing them with The Eyrie Vineyards 2024 Chasselas Doré. From The Eyrie website: “our vineyards have never used herbicides , pesticides, tillage or irrigation. We take organic certification as merely the first step, and then we build on it.” This is exactly what we want to hear. This native Swiss Chasselas grape makes a beautiful wine. Fresh tropical and savory and just 10% alcohol. Perfect huh?

Hello Salty Goodness! Tonight’s oysters are Blue Points from the Atlantic along the Connecticut Coast. We’re pairing them with the Spy Valley Sauvignon Blanc from the Waihopai Valley of Marlborough, New Zealand. Deep in the wilds is the beautiful, untamed land that the Johnson family dared to grow vines. Strongly committed to the land, their focus is on sustainability that will preserve the vineyards for generations to come. Juicy with passion fruit, grapefruit and peach it’s the perfect wine to cut through the brine. Yum!
