Just a leisurely Friday evening with my wife and best friend Mimi preparing an unconventional pizza and a remarkably delicious pizza! Cacio e pepe sauce with braised leeks and baby Bella mushrooms. That was one of the most flavorful pizzas I have ever prepared! And the other pie is what we refer to as the Mimi. Olive oil base with shrimp, mushrooms, spinach, black olives and sautéed red onions. Life is indeed pleasant! Thanks to my son Jordan for his Cacio e Pepe sauce recommendation.
