I have a hard time remembering to take pictures while I’m cooking. In the moment, the food and the people around me demand every bit of focus I can give, so I usually rely on others to capture those glamour shots. But I managed to snap this one, and it sums up exactly what I was lucky enough to experience—a table full of food, surrounded by incredibly talented and passionate people, all giving and learning as much as they can.
I want to thank for welcoming me back into their kitchen after seven years and giving me the space to express my passion. Walking in on that first prep day felt… strange. Seven years, a new space, and almost an entirely new team—I had no idea what to expect. But as I scrambled to organize my plan, I stepped into the walk-in, and the scent memory hit me so hard I froze. In an instant, I was back in every crazy night of learning, earning (and sometimes burning) my way to becoming a chef. and (and too, I guess 🙄) have built something that goes beyond a single space or moment in time. They are the roots of a family with more branches than I could ever count, shaping some of the finest and most talented chefs in Milwaukee. I’m lucky to consider myself part of that.
Bringing Miijim to Milwaukee, cooking alongside incredible people, and seeing so many happy faces in the dining room—all for the sake of sharing what I know—was humbling and honoring. I can’t thank you all enough for the opportunity, and I hope to be back again, soon.
