What’s the difference between whole wheat and white flour?

Both start with the same wheat berry—the difference is which parts of the grain remain after milling.

🌾 WHOLE WHEAT FLOUR The entire wheat berry is milled: bran + germ + endosperm.
✔ More fiber
✔ Naturally contains more vitamins and minerals
✔ Richer, nuttier wheat flavor
✔ Contains the wheat germ and its natural oils

🤍 WHITE FLOUR Typically made primarily from the endosperm, with the bran and germ removed.
✔ Lighter color
✔ Milder flavor
✔ Softer texture
✔ Great for cakes, pastries, cookies and many breads

🌾 I love milling the whole wheat berry fresh because I want to keep the grain whole, flavorful and fresh.

🌾 Week 8 — Fresh Milled Flour Fact Monday!

Why does commercial flour often have a longer shelf life?

Have you ever wondered why a bag of store-bought flour can sit in the pantry for months while freshly milled whole-grain flour is best used much sooner?

The answer is largely the wheat germ and its natural oils. 🌾
When whole wheat is milled, the flour contains the bran, germ, and endosperm. The germ contains natural oils that can gradually oxidize and affect freshness.
Commercial white flour is typically milled and sifted to remove the bran and germ, leaving primarily the endosperm. Many commercial flours are also processed or treated to improve their baking characteristics and storage stability.

✨ Fresh milled flour is different!
Because we mill the whole grain, those natural oils remain in the flour. That's one reason fresh-milled whole-grain flour has a shorter shelf life—and why freshness matters!

💡 Fresh Flour Tip:
Store fresh-milled whole-grain flour in an airtight container in the refrigerator or freezer to help preserve freshness.

🤓 Fun Fact:
In the fresh milled flour world, people refer to commercial flour as "dead flour" because that is how commercial flour was discovered.
Flour mills started sifting the bran from flour and leaving the flour out to dry/ die.
