When this concept started out, the goal was to become quickly known nationally and grow a following far beyond our hometown. Its amazing to see and other national publications taking notice. The idea of blazing a trail and creating a concept that's left of center is bold and likely not advisable. Its safer to make whats expected and more easily adopted by the general public. Sticking true to a vision is not easy, but its moments like this and with words by that continue to build momentum. Thank you! Link in story.

New new!!! 🔥🔥🔥Watermelon salad!!! Story time: while putting the salad together this morning, I tasted the finished product and proclaimed: “move over , I am the new mayor of flavortown!” A few minutes later I went out front to snap this image, and look up to hear the voice of none other than saying “looks good chef!”. The universe works in the wildest of ways. Guy, welcome to flavor town, my friend. We can debate on who the real mayor is. On another note, the watermelon salad comes with large chunks of fresh watermelon, jalapeno tajin and lime zest. Its wildly bright and delicious. Perfect for these hot La Mesa summer months. Ps. 🔥🔥🔥”You dont have brisket?!” No. We. don’t. Let’s talk beef. Pictured: herb butter smoked beef chuck steak. This buttery smokey cut is smokey like a brisket but eats more like steak. Its our favorite at the moment. Why not brisket? Bbq has historically been the practice of taking the less desired or most inexpensive cuts of protein and through skilled cooking, creating surreal food with the aid of woodfire/smoke. In our current supply and demand economy , medium grade brisket goes for around $4.99/lb. Once you trim off the brisket for even cooking, you lose 25% which now brings the cost way up. Now cook it and lose another 30% to shrinkage. Now we sell bbq by cooked weight and not raw. You tracking? Brisket is not inexpensive anymore and it still takes 12 hours to cook. Bleh! For that kind of buck, there are plenty of far better and less expensive cuts. Instead of us offering brisket, just because everybody else does, we are honoring tradition by utilizing less expensive and less desireable cuts to create works of art. Enjoy this cut and others on our rotating Beef of the Day menu option. Also great for catering!
