Trying out some fantastic Honduran natural processed coffee from The Barn coffee roasters in Berlin courtesy of Standart magazine. Colorimeter reading shows a cinnamon roast color and the flavor was a distinctly clean and sweet fruit bomb. Some people think that cinnamon roasts are going to be underdeveloped in flavor profile but this coffee proves that cup taste trumps traditional assumptions and dogma.

If anyone is wondering about what a cinnamon roast is, it's a lighter roast than a traditional light roast coffee. Current sensory science research suggests that the lighter the roast the brighter and more delicate notes will shine through and more of the origin flavors will be retained. The darker the roast the more traditional coffee roast flavor and chocolates will be emphasized and the brighter notes will be subdued.

Latte art progress...the heart is the most basic pour for latte art but getting even that right means all the fundamentals need to be right (milk steaming, proper extraction, pouring). Lots of failures/partial successes depending on your outlook in between each milestone. Gotta crawl before you walk.
