Mac and Cheese Steaks All about the Food This is me (Chris) and my food cart (Mac And Cheese Steaks) in a nutshell. Grew up learning to cook Mac and Cheese when I was a kid.

From when I was of legal age, I started working in the food industry. As I grew older, I moved to Portland, OR for culinary school and started working for Hall Street Grill in Beaverton. Upon working at HSG, I was a Sous Chef for an Italian restaurant, and then became an Executive chef of another. I love food, fun, knives and fire, so the idea to put my work into a food cart to let everyone try it

makes for a perfect combination. The food I am choosing to prepare is my favorite comfort foods. Mac and Cheese (you can never go wrong with), and Cheese steaks (almost a Philly Cheese steak). There were some items that I felt needed to be brought to Klamath Falls. Truffle oil, and Duck fat. Those are two of my favorite seasoning oils that I used in my culinary crusade. Good morning everyone, with school back in session, we are doing the school menu. The one sandwich that I remembered from childhood is sloppy joes.

Ground beef sautèed with onions and red bell peppers and mixed with a sloppy joe sauce, and topped with cart made cheese sauce on a philly roll.

Good morning everyone. Here is this week's special mac and salad.

The mac is slow roasted pork, shredded and added to a cart made salsa verde and added to a traditional mac and cheese.

The salad is on a bed of mixed greens with fresh strawberries, goat cheese, and sautèed chicken. It is accompanied by a moscato vinaigrette.

Good morning everyone. Here is this week's special mac and salad.

The blackberry peach caprese is on a bed of mixed greens with grilled peaches, fresh blackberries, basil and mozzarella, topped with a balsamic reduction and accompanied by a balsamic vinaigrette.

The bbq chicken mac and cheese is a traditional mac and cheese tossed with sautèed chicken and bbq sauce, then carmelized a little bit.

Happyish Friday everyone. Been too busy since the fair, and have been forgetting to post. So here's all of this week's specials, that go through Sunday.

The chicken za'atar salad is on a bed of mixed greens with cucumbers, kalamata olives, garbanzo beans, feta, grape tomatoes and chicken sautèed with za'atar seasoning. It is accompanied by a lemon dill yogurt dressing.

The sweet, heat and meat, is shaved sirloin, candied bacon, jalapeño jelly, grilled peaches and pepper jack cheese on a sandwich.

The mac is a traditional mac and cheese tossed with shredded chicken, black olives and a cart made enchilada sauce.

The crème brûlée is more fun to watch being prepared. Bananas cooked with rum, brown sugar, cinnamon and butter. Then mixed into a vanilla creme brulee base, to make Bananas foster.
