This is the batch of caramel that came out perfect. The burnt batch is right behind it. I couldn't stop "tasting" it to make sure it was just right!!! 😅 I'm supposed to be watching what I'm eating. But, it's hard when you make something new.

Just made caramel sauce using the melted sugar method. You need a lot of patience and a good digital thermometer. I switched to this non-stick pan after overcooking the prior batch in a thick bottom stainless steel pot. It was just a tad bit overcooked.
