Carpo opened 6 restaurants in 2015 and will be opening or purchasing another 8-10 in 2016. Carpo's success is dependent on key team members and paying attention to detail. Dr. Scott Irvine and his wife Kendra are the founder's of Carpo. Dr. Irvine is the president and CEO while Dr. Ed McCaffrey serves as COO and Jim Mellon as CFO.
