Estelle Tracy’s journey into the world of craft chocolate began here at Philter Coffee. Where a single bite of a Twenty-Four Blackbirds Madagascar bar sparked her curiosity. Inspired by the unique flavors she discovered on Philter’s bean-to-bar shelf, Estelle launched the “37 Chocolates” challenge in 2015, sampling 37 US-made bars by her 37th birthday, which eventually blossomed into her full-time career as a chocolate sommelier and educator. Over the years, she has returned to her roots at the cafe to train staff and share her expertise. Now, this long-standing friendship is coming full circle as 37 Chocolates partners with Philter to open a curated mini shop right inside the cafe, bringing Estelle’s favorite hand-picked bars back to the very place where her passion first ignited.
