Brown Butter Chocolate Chunk Cookie Recipe:
• 170 g unsalted butter (82% fat), browned and cooled
• 180 g dark brown sugar
• 85 g granulated sugar
• 1 large egg, room temperature
• 1 large egg yolk, room temperature
• 2 tsp vanilla paste or powder
• 5 g water (I forgot to add to this recipe so omit if you want this same look)
• 180 g all-purpose flour
• 40 g bread flour
• 3 g baking soda
• 4 g Diamond Crystal kosher salt
• 140 g milk chocolate wafers, Guittars
• 60 g 66% dark chocolate, Valrhona
• 1 pinch flaky sea salt, for finishing

Rest overnight, weigh to 80g balls and bake at 375f for about 10 min

Inspired by the pistachio cruffin at Saint Jean bakery in Amsterdam 💚
