I made my yearly trip out to Peachland North Carolina for the 3rd annual Jubilee (a fundraiser for a children’s organization) this past weekend. It reminded me how special the barbecue community really is, and how much I miss it! Met up with lots of friends and made new ones as well. It is such a privilege to be able to participate in this event for such an important cause. I always leave inspired and my heart and belly full!

Pleased to report that the 1000G has made it safely to its new home at in Peachland North Carolina. I couldn’t be happier that this pit is gonna be used to cook some of the finest barbecue in the country by some of the finest people anywhere. I’m also thrilled to do one more cook on it tonight for the second annual Jon G’s Jubilee!

I’m cooking ribs tonight for Mother’s Day, and this just happened to arrive today.
I have to say that I’m humbled and proud (is that possible?) about what was accomplished at Fox & Fire Barbecue.
I’ve a wonderful (and ongoing) career in the animal health industry, and in fact, if it wasn’t for my “real job” I probably would have never been exposed to central Texas barbecue. What started as an obsession to replicate the brisket, sausage, and ribs I had in Texas a decade ago, ultimately culminated into this. I’d guess I’d say thank you to everyone that was ever involved in Fox & Fire Barbecue. Family, friends, employees, customers, and barbecue editors 🤠
For those that don’t know, we closed the food truck shortly after this was published. While I miss it everyday, there are no regrets on that decision. Maybe barbecue will come back into my life one day, but if it doesn’t, I’ll always have this! And maybe you’re thinking of starting a business or something else that seems a little crazy…I’m here to tell you that dreams can come true!

This is it!

One final reminder that we are only doing pre-order pickup from 11am-3pm today.

(If you didn’t pre-order and pay through our online shop, you don’t have an order. Sorry, but we got flooded with requests via email and DM, and this was the only fair way to do it).

Folks that ordered briskets will have a remaining balance based on weight at pickup.

We will NOT have window service today.

Hi all - here is the pre-order information for our last service on Saturday March 2nd. We will NOT be open Wednesday-Friday.

• We are only selling whole meats: briskets, whole slabs of ribs, pork butts and turkey breasts.

• We will likely sell out. I have a limited stock of meat to prepare, and once it’s gone it’s gone. It’s unlikely we will have window service, but will post on socials if we do.

• no sides will be available

• I can’t accept orders via email or direct messaging. Sorry, but this is the only fair way to do it. I realize not everyone will get food.

I started and stopped writing this post several times. I guess there just isn’t an easy way to say it, but we have made the decision to close Fox&Fire BBQ.

I love cooking BBQ. I love running a business, my team, our customers and serving the community. But at the end of the day I miss my family and love them more than barbecue.

I have 3 young children, a wife, and a life I feel I am missing out on while running the trailer. And not to mention still working a full time job all while trying to get this business off the ground.

Something had to give.

What about the building? We were hopeful we would be able to expand our business into a brick and mortar that would smooth out some of the operational challenges of trying to run an outdoor business in the Midwest. However, even with a very modest building design, and building it ourselves, it would have cost at least a half a million dollars, if not more. As much as we wanted it, we just can’t make that work.

So, what’s next?

We are going to do one last cook to get through our inventory of meats. We will be selling whole meats via pre-order. Pickup on Saturday March 2nd. What doesn’t sell via pre-order we will sell at the window. Will post the details shortly…

I also wanted to thank all of my team (some have been with me for years!) I truly had a great team of people and I hope that came through to you all!

Thanks for your support over these past 4 years. It’s truly been my honor and a blessing to serve as long as we did.
