Most people who steep loose leaf tea are measuring by habit, not by intention.

One teaspoon per 8 oz is the right place to start, and it works well for most teas. But once you understand why it works, and where it breaks down, you can start making real adjustments that actually improve your cup.

The short version: a teaspoon measures volume, not weight. A teaspoon of white peony and a teaspoon of rolled oolong are not the same amount of tea. Same scoop, very different steep.

Meet Bora, our brand new house blend and this week's tea of the week.

If you love Bora Bora but have ever wished the fruit and floral notes were a little softer, this is the blend we made for you. Bora is the same black tea base with half the exotic island fruits, giving you hibiscus, papaya, currants, elderberries, raspberry, strawberry, and flowers in a more subtle, refreshing balance.

It steeps beautifully hot, but it is honestly one of the best iced teas in the shop. Slightly sweet from the fruit alone, no sugar needed.

Not all caffeine is the same experience.  Tea has two things going for it that coffee does not.

First, the dose.  A typical cup of black tea has around 40 to 70mg of caffeine.  A typical cup of coffee has 90 to 200mg.  Before anything else comes into play, you are already taking in anywhere from nearly half to as little as one fifth of the caffeine.

Second, L-theanine, a naturally occurring amino acid found primarily in the tea plant and almost nowhere else.  

Research shows it works synergistically with caffeine, meaning the two compounds together produce something greater than either one does on its own. The result for many people is calm, focused alertness rather than a sharp spike and drop.

It is not just a preference. The science is in the cup.

This week's Tea of the Week is Creamsicle, a house blended Tea Market original.

This whimsical blend of black tea, orange slices, tangerine, Madagascar vanilla bean, and marigold flowers is sure to remind you of your favorite childhood treat.

The aroma alone, thanks to a natural compound called limonene found in citrus peels, which activates the brain's reward centers and has been shown to increase dopamine activity.
