Customers ask why such a long fermentation process?

Fermenting dough reduces bloating mainly by breaking down hard-to-digest compounds in flour. This process makes bread gentler on the gut, especially for those sensitive to carbs or gluten.

Flour contains enzymes that require a minimum of 8 hours to break down, this is one of the reason eating a pizza with dough made that same day will give you a bloated feeling.

We at NYPD prolong this fermentation to 24-48 hours cold and 6 hours at room temperature.

Our crust is airy and crispy making sure all that gluten is transformed to CO2.
