Good morning to everyone....we just wanted to pop in here and say HI!!! We really miss everyone SOOO much and have been pretty busy. As you know from our previous posts this year, it's been a challenging year healthwise for our family but we are prayerfully reaching a solution to issues with one parent and then still have one to go. :) We have two (parental) surgeries upcoming, one next week, and appreciate ALL the prayers!!!!!
In the middle of it all, as we have not been able to run the food truck together due to being on standby for er trips and dr visits, we have added a new "faith baby" to our lives. So if anyone is in need of a handyman who just so happens to cook REALLY good :) then don't hesitate to reach out to us at the same number 386-855-1728. Good morning from your long lost taco truck. ☺️☺️
We're hanging in over here and if you read our really long explanatory post below, it explains where we've been and here's a little update.....
We've made it thru so much this year with my (Connie's) parents and have two more pretty big hurdles to jump and recuperate from. We don't foresee opening before they are resolved, but we will update and keep you posted here.
We hope this year has been good to everyone and we REALLY REALLY REALLY MISS Y'ALL!!!!!!! ❤️❤️❤️❤️

Good Monday morning!!!

We know....we have missed everyone too!!! No, we've not been open since last year and neither one of us have had al pastor tacos since last year either!! This year has been rather crazy hectic so here's a little update and why we've answered I don't know to the When will y'all be open questions. :)
As y'all know, we had shut down the end of the year last year in order to help out some friends with a remodel nightmare disaster. That disaster is now almost completely a dream as they have been able to move back into their home. There are still some things to work on and we're trying to work out a tentative future schedule.
In the middle of all of it, my dad (Connie's) got sick in January with Covid and for the first time in his 84 years of life, had to be hospitalized. He has been blessed with excellent health his entire life so this was extremely hard on all of us. He came home weighing less than he had ever weighed (having no weight to lose), Covid positive, on oxygen and very sick and weak. Mom has had a history of heart issues and between the two of them, dad with Covid complications and mom worrying too much about him, we became very familiar faces on first name basis at the Live Oak ER which I cannot say enough positive things about. After multiple ER trips and hospital stays, we all are extremely grateful for the many miracles we have received this year. There was a point that I came home after yet another brush with death and I told my husband, If God never ever ever ever does anything else for me again as long as I live, NO ONE can ever convince me that He is not a miracle working God. Despite excellent medical care, there were times this year that there simply was no explanation except it was a God thing that happpened.
We are now able to breathe a sigh of relief, dad is gaining weight again, turned 85 in March, able to mow his grass again (THAT was a cause of great concern for him), gaining his strength back and the emergencies are not happening as often. Mom is doing MUCH better, God has opened up doors for an ever better medical team to take care of her and we are continuing to believe for more miracles and grateful for the ones God has given us so far.
If you are still reading this......this is just a short, tiny summary of the craziness we have been through this year. We hope to be able to open up soon but at this point, we don't foresee it in the next couple of weeks. Once we see we will be able to, y'all will be the first to know.
Thank you so much to each and every one that have prayed for us, sent messages, tagged us in posts even though we haven't been open, and showed your love, care and support. We truly are blessed by the Great Amigo to have so many who care. We love y'all too and hope to see you in the next month or so.

Calling on all of our favorite people to please PLEASE pray for one of our littlest customers. He is in critical condition and really needs a miracle TODAY. Please keep him, his brother and parents in your prayers and let's believe that the best of all, our Lord, Saviour and Healer Jesus Christ will perform miracles for this baby!!!! 🙏🙏🙏

Tonight is the LAST NIGHT of 2021 that we will be open!!!!! We'll have all your favorites including plates, tacos, quesadillas and nachos.

We have enjoyed seeing everyone 🥰🥰 (we REALLY have missed y'all!!!) and we will be back in 2022 as soon as we can after finishing up our major remodel job for friends. We will still be available if anyone would like to preorder for the holidays a smoked Boston Butt or a tray of smoked chicken, a chocoflan (that's what she REALLY wants for Christmas), etc. Text or call us, we look forward to serving you.

We have some LONG awaited news for everyone that has been so patient with us while we've been shut down for our other job. We are ALL going to have a as we will be OPEN!!!!! 🥰🥰🥰

We've been busy helping friends with a house remodel and it's went from what looked pretty hopeless to looking like home. We plan to be open this week and then we will see about next week. We will have to shut down again from Christmas to New Years as we will be back working there again trying to finish up their home so they can move back in asap.

Just for viewing pleasure and because taco trucks don't usually post remodel pictures but we're not your normal taco truck 🤷‍♀️😂, here's a few before and after pics. There's still more work to do but it's looking and feeling a lot better from when we took over the job a couple off months ago.

We had hoped to open this week but both of us are having an allergic reaction to the cold weather we had over the weekend. 🤧🤒🥴 We will update when we will be open again....and we feel your pain!!!! We miss the tacos too!! Bundle up and stay warm and get the plants on as it looks like we will have our first hard freeze in a few days. 😭😭

We will be closed the rest of the week due to a remodeling project for friends and trying to get them in their home again by Thanksgiving. Thank y'all so much for understanding and we plan to see everyone next week.
