Did you know we source our catering event bread from the most scrumptious focaccia maker around?! So, who's the mastermind behind these delectable treats you ask? We're excited to share!

It's the talented Chef Gabe, owner and head chef of Jacksonville’s very own Gogi's Restaurant. Not only does Gabe craft mouthwatering focaccia and sourdough, but he's also an exceptional head chef.

In our humble opinion, Gogi's stands out as one of Southern Oregon's top restaurants. We're huge fans of Chef Gabe, his incredible bread, and the unforgettable dining experience he offers at Gogi’s.

The KRAUT KING, Chef Aaron, is back with his latest blaukraut creation. This time, he's experimenting with salt testing, pitting Celtic grey salt against Maldon salt. At Jefferson Farm Kitchen, we love pushing the boundaries of flavor by testing different ingredients and discovering their unique qualities.

As this organic sauerkraut continues to ferment, we're eagerly awaiting the outcome of the salt tests, but one thing's for sure - it's going to be mouthwatering!

The high schoolers in our Culinary 101 program continue to amaze us with their willingness and ability to learn new cooking skills and techniques. Recently our students learned how to work with puff pastry, making their own tarte soleils, the same ones we often serve as appetizers for catering events! Our students had many options for fillings, and were encouraged to get creative. Fillings included (but were not limited to) housemade olive tapenade and ricotta, nettle pesto and parmesan with toasted pine nuts, sun-dried tomato with feta and Herbes de Provence, whipped garlic butter, and dried dill, Maldon salt and/or everything seasoning to top! It was a fun and delicious class.

Helping Aaron in the kitchen is Sebastian, a former student of our “Learn to Cook at Home” class. Sebastian is shadowing the business for a school project and will be learning the ins and outs of running and operating our small business. His first day shadowing is all about cooking, packaging, cleaning and what it takes to get ready for a FLASH SALE!

At Jefferson Farm Kitchen, we're committed to nurturing the next generation of culinary enthusiasts. Recently, our chef instructors, Chef Aaron and Chef Dakota, visited Logos Public Charter School to discuss our Learn To Cook At Home class series, which teaches Logos Charter School’s middle and high school students essential kitchen skills.

Through hands-on learning, students develop real kitchen confidence, mastering skills like knife work, meal planning, and food safety. Our chefs shared their personal journeys, answered questions, and encouraged students to view cooking as a valuable life skill and creative outlet.

Jefferson Farm Kitchen is proud to support the next generation of home cooks and future chefs!
