HIJOLE! We are so incredibly thankful to everyone who came out to support and enjoy our Grand Opening Fiesta this past Saturday, August 29th.

It has its roots in pre-Hispanic Mexicas and Mayans cultures, who relied heavily on maize and focused on sustainability, rarely wasting food; originated as a practical, zero-waste dish that utilized day-old tortillas.

Derived from the Nahuatl word chīlāquilitl (meaning "covered in chili" or "chilied herbs"), this comforting dish has evolved from a simple method of reviving dried corn tortillas in spicy salsa to a popular, versatile breakfast, brunch, or brunch-style hangover cure globally.

As Spanish, and later Mexican-American, influences took hold, ingredients like cream and cheese were added, making it a staple across Mexican households and later in the Southwestern United States.

FAJITAS is a tex/mex dish created around the 30's and 40's by mexican cowboys in west texas. They cooked skirt steak on the grill.

This cowboys received skirt steak as part of their payment. In order to blend the meat it was grilled directly over the fire.

The name comes from the diminutive of "FAJA" wich is a type of fabric belt used to compress, it alludes the meat piece name, wich is the skirt. So is something like "a fajita to hold the skirt".
