Roots of the Sandwich:

The earliest documented ancestor of the sandwich is the Korech, created by Rabbi Hillel the Elder, who combined bitter herbs and nuts between pieces of unleavened matzo.

Ancient Greeks and Romans regularly stuffed bread with cheese, herbs, and fish paste.

In 1762 the Earl of Sandwich was a notorious card player. Legend states that during a particularly long, 24-hour gambling session, the Earl did not want to leave the gaming table to eat.

To avoid getting his fingers greasy and to keep his hands free, he ordered his servant to bring him roast beef placed between two pieces of toasted bread. The idea caught on quickly among London's elite, who began ordering "the same as Sandwich".

By the early 19th century, the sandwich had migrated to America, appearing in the country's early cookbooks. It quickly evolved from a quick aristocratic snack into a versatile, portable meal for the working class.

Recipes began to feature a wider array of fillings, including shellfish, fruits, nuts, and complex spreads.

The advent of commercially sliced bread (and the invention of the electric bread slicer in the late 1920s) made sandwiches a ubiquitous lunchbox staple worldwide.

Derived from the Nahuatl word chīlāquilitl (meaning "covered in chili" or "chilied herbs"), this comforting dish has evolved from a simple method of reviving dried corn tortillas in spicy salsa to a popular, versatile breakfast, brunch, or brunch-style hangover cure globally.

As Spanish, and later Mexican-American, influences took hold, ingredients like cream and cheese were added, making it a staple across Mexican households and later in the Southwestern United States.

FAJITAS is a tex/mex dish created around the 30's and 40's by mexican cowboys in west texas. They cooked skirt steak on the grill.

This cowboys received skirt steak as part of their payment. In order to blend the meat it was grilled directly over the fire.

The name comes from the diminutive of "FAJA" wich is a type of fabric belt used to compress, it alludes the meat piece name, wich is the skirt. So is something like "a fajita to hold the skirt".
