Due to a few messages I received lately, I felt it was time for an update, and a Final Post for Olio.
It appears my time as a chef is past. The ability to stand for long hours is just not possible anymore due to my ongoing health issues..
I've done a lot of thinking what to do with my future, and I found an answer, surprisingly, by looking at my past. While scrolling through my facebook feed, I realized that my posts are mostly about travel, It caught me off-guard as I would have expected them to be more about food. It made me think, and reflect back on my past.
Some of you may not be aware that when I first became a chef, I traveled extensively across the country, and the world, pickup up on different cuisines and techniques as I went. I have spent time abroad in Ireland, France, Italy, the Caribbean, and having traveled and worked in most of the continental United States as well, backpacking through Yellowstone, and Tennessee, the list goes on and on. In the last few years, it’s been taking cruises to various locations, when I could.
Now without the ability to cook, it seems a future in travel makes the most sense, as it has always been a personal passion for me, even though at times my career prevented it. My love of the hospitality industry, paired with my experience and passion for travel, makes a perfect opportunity as a Travel Planner and Agent.
Exposure to other cuisines, and cultures, has really left an impact on me throughout my life, and has changed, not only the direction of my path, but my perspective, and thoughts on issues, dramatically. After all, we are explorers at heart, and sometimes people forget that, as they are swept away by work, and the necessities of life.
Hopefully I will be able to help some people go out and explore for themselves, or attend a friends wedding, or just take that needed break, that I often overlooked throughout my career.
So if you, someone you know, or your business is looking to travel, I hope you will think of me and my new/old company. Olio Travel Company. There are no fees to check my pricing, and after doing some comparisons with leading travel websites, I am finding I could save you some money.
One of the definitions of Olio was “A Mixture of Artists Things”. I tried to embrace that in the restaurant, and hope I can continue to do that with Olio Travel, as In the future, I wish to develop some specific food & wine adventure tours, which will focus on trips to incredible destinations, paired with incredible restaurants, and incredible art.
A final thanks to our entire community here for everything they’ve done for the restaurant, and myself over the years.
Sincerely,
Greg DeSanto
