Lamb Samsa is a Central Asian pastry filled with ground lamb, minced onions, chopped cilantro, cumin, coriander, and cracked pepper. As you might have guessed, it’s similar to Samosa from Indian cuisine.

Beef Chebureк is like Empanada, a fried turnover with ground beef, ground onions, cilantro, black pepper, cumin, coriander. Even though it hails from Central Asia, it is popular street food in Ukraine. Blistered crusted and juicy meat filling are preferred. I like to use equal amounts of onions and beef in the filling. While frying, the combination produces generous amounts of ‘soup’ inside this meat pie, which can sq**rt and cause instant skin burn, should you break it immediately after frying. The word ‘Burek’ or ‘Borek’ is probably Turkish in origin. However, burek‘s of any variety can be found in the Balkans, the Middle East, and Central Asia
