For Chef Nick Wallace, Hen & Egg has always been more than a restaurant. It is a reflection of where he comes from and the people who shaped him. Inspired by his grandmother, represented by the hen, and his own journey, represented by the egg, the brand is rooted in family, heritage, and the belief that honoring the past is what helps shape the future.
From opening our first location inside the historic Sun-n-Sand in downtown Jackson to now announcing our second home at The Gallery in Madison, this journey has been fueled by purpose, passion, and the unwavering support of our community.
Today, we’re proud to officially announce that Hen & Egg is coming to Madison in 2027.
This isn’t simply about opening another restaurant. It’s about continuing to grow a Mississippi brand that celebrates our roots, tells our story through food, and creates spaces where people can gather around unforgettable experiences.
