Q: Where are you from?
A: Texas. Planet Earth.

Q: How long have you lived in Jackson?
A: 9 years.

Q: What is your role at Trio?
A: I cook the food!

Q: What is your favorite dish on the menu right now?
A: Ooo, the pork chop.

Q: Winter or Summer?
A: Hmm, Winter.

Q: What is your favorite Winter activity?
A: Going inside. Just kidding. Skiing and snowboarding. I usually snowboard more than I ski.

Q: What is the first dish you remember loving?
A: Gerber’s applesauce. That s**t was amazing.

Q: What is your go-to dish to make at home?
A: Boy slop. Rice, sweet potatoes and ground beef.

Q: Favorite movie?
A: Umm, The Little Rascals. It’s amazing. Or the Town Square traffic camera.

Q: What is one thing you always keep in your fridge at home?
A: Honey. I put it in smoothies and tea.

Q: What is the best piece of advice you’ve ever gotten?
A: In EMS we learn that seconds matter. Time is everything. So don’t rush through life.

It’s a great day to Meet the Staff! Today we’re getting to know a beloved team member, Marlon Olivas.

Q: Where are you from?
A: Juárez, Chihuahua, Mexico.

Q: How long have you lived in Jackson?
A: Four years now.

Q: What is your role at Trio?
A: I’m a server slash bartender.

Q: What is your favorite dish on the menu right now?
A: I would say the flank steak.

Q: Winter or Summer?
A: Summer.

Q: What is your favorite Summer activity?
A: Probably going to the lake with my wife. On our days off we like to go to String or Jackson Lake. We make a ceviche at home and bring it to go paddle boarding and hang out by the water.

Q: What is the first dish you remember loving?
A: This is probably going to sound crazy but my mom’s chilaquiles verde. Most kids don’t like it because there’s a lot of spices and a lot of garnishes. But I always loved it.

Q: What is your go-to dish to make at home?
A: Probably skirt steak tacos. I like to make them with corn tortillas, green salsa, lime and cilantro, and fried jalapeños on the side. My wife doesn’t like onions so we usually don’t use onions as a garnish.

Q: Favorite movie?
A: I have a couple…but probably Magnolia or No Country for Old Men. I also like Casino. I really like mafia movies.

Q: What is one thing you always keep in your fridge at home?
A: Jalapeños. I use them with breakfast, with tacos, with everything. Also sparkling water.

Q: What is the best piece of advice you’ve ever gotten?
A: Someone once told me that problems don’t exist, we create them in our minds. That’s always resonated with me.

Q: Where are you from?
A: I’m from New York. The Lower Hudson Valley.

Q: How long have you lived in Jackson?
A: A year now.

Q: What is your role at Trio?
A: I’m an expo, support staff, and friend!

Q: What is your favorite dish on the menu right now?
A: Easy - the coffee rubbed venison.

Q: Winter or Summer?
A: That’s a hard question…I was thinking Winter. But I do like the fact that I can walk to and from work during the Summer.

Q: What is your favorite Winter activity?
A: Ummmm, skiing! *Duh!*

Q: What is the first dish you remember loving?
A: Off my hip, my Mom just called it “pasta with garlic and olive oil.” But she would add spinach and chicken. She would only make it for me because I was the only one that liked spinach. So it was me and my mom’s dish.

Q: What is your go-to dish to make at home?
A: Hmm, shrimp and buffalo or beef tacos. My partner and I are constantly making tacos.

Q: Favorite movie?
A: Favorite movie is Pee-wee Herman’s Big Adventure.

Q: What is one thing you always keep in your fridge at home?
A: Whipped cream in the fridge. Hot chocolate in the pantry.

Q: What is the best piece of advice you’ve ever gotten?
A: Something I always think about while thru-hiking is to just be present and enjoy the moment. Appreciate each day as a part of your evolution.

We’re back with another Meet the Staff! Today we get to meet the beautiful person behind the camera and all things creative. She’s the one who makes all the marketing magic for both restaurants, Kelly Little!

Q: Where are you from?
A: I’m originally from Dallas, TX.

Q: How long have you lived in Jackson?
A: 5 and a half years.

Q: What is your role at Local and Trio?
A: I’m the Marketing Manager for both restaurants, as well as a floor manager and server at Trio!

Q: What is your favorite dish on the menu right now?
A: I love the new pesto Genovese.

Q: Winter or Summer?
A: Summer, for sure!

Q: What is your favorite Summer activity?
A: Taking my dog, Birdie, hiking and swimming on sunny days. She’s a little river rat.

Q: What is the first dish you remember loving?
A: It has to be pierogi, my family has had a tradition of eating them on Christmas Eve since I was little!

Q: What is your go-to dish to make at home?
A: Probably a pantry pasta. Anything goes!

Q: Favorite movie?
A: Hmm, I would say either No Country for Old Men or Blade Runner 2049…honorable mention for Prince of Egypt.

A: Coconut yogurt and coconut milk.

A: You can’t grow in your comfort zone.
