Adelina’s Roman style pizza is the anti-cornicione, un-flat bread pizza. Unlike Neapolitan style pizza which boasts a thick crust and a flat center, Roman pizza has almost no crust— we believe in trying to give a uniform taste in every bite. Although our pizzas are oblong like a “flat bread” pizza we are anything but flat. The open crumb style of Roman pizza is a marriage between artisanal bread and pizza. While we make a Roman style pizza, we break the rules of this style by using local flours and high have a lower gluten content than the parameters decreed for a true Roman pizza and we achieve this by coaxing our dough with a marriage ancient and modern techniques that took years of focused attention to achieve. The late freeze and billowing smoke this summer gave us a late tomato harvest but local cherries are finally here and we are foregoing our cherry tomato confit for fresh, post oven cherry tomatoes while the getting is good. Oh— also starting next week we will be open Wednesday-Friday 5-9 as we have had a lot of requests to be open for the Wednesday Jazz night see you there
