Sorry for being silent this past week or so!

It’s been a very foody vacation in Los Angeles California. With the help of my uncle Ruggero, I’ve learned a lot of techniques and authentic Italian cooking. I’m going to use this trip in a lot of aspects in life, ESPECIALLY my business. There will be some changes coming soon.

It was an interesting week at the fair. Very Smokey Wednesday-Thursday and very hot on Friday. Had some doubts until Saturday came along. It was a crazy awesome day. Thank you so much for everyone who showed up and I had many repeats and people who have had some Mac before.

I met a lot of awesome new folks and caught up with a lot of people I haven’t seen in awhile. It was a lot of hard work but I definitely appreciated the week I had.

I did the math and I believe I worked for about 100 hours this week. Monday-Sunday. Pulling an all nighter Friday was necessary, but very tiring lol.

 next event is Saturday and it’s the street dance! It’ll be a blast and excited for it.

July 13th, 2025 was my opening day last year. I couldn’t have got better support from an awesome community. This last year was full of ups and downs but I definitely found something I truly love doing. Couldn’t have asked for a better starting year.

Thank you for contributing to the business, just by staying tuned on the Facebook is still supporting. I wouldn’t want to be serving food anywhere else. I love Isanti and I don’t plan to go anywhere else anytime soon.

I have some big announcements to make that actually aren’t food trailer related… I’d consider it the biggest opportunity I’ve ever received.

Stay tuned and in the meantime, come stop by the Isanti county fair!!! I’ll be setup all weekend 👍

I am all setup at the county fair!

It’s crazy what stress can do lol. I’ve been worried about this event for over a month now and I’m finally glad it’s here.

It’s definitely very difficult to prep enough homemade mac n cheese for this many people but it has definitely put my mental to the test and I’m very proud that I’ve got to the point where I feel comfortable enough where I think I can make it through the 5 days.

Open 13 hours a day 10 am - 11pm Thursday - Saturday
Open 3-11 pm Wednesday
Open 10 am - 6 pm Sunday
Isanti County Fairgrounds

Lots of people here holy cow!

At the Splish splash summer bash event in Isanti! Water slides, water bouncy house things, rock climbing wall and a bunch of other fun stuff for kids to have a blast. Come stop by! Don’t even have to get Mac n cheese, just stop by and enjoy yourself 😁

We are back with a banger!

They have me assigned at the Saint Elizabeth church parking lot at the start of the parade:)

Then after the parade, I will be at the Isanti fireworks at bluebird park.

Hey everyone! Just a quick update:)

Yesterday was an awesome private event with awesome people. It was a last minute thing since the food truck that planned on going dropped out. Very thankful for the opportunity to be there!

I have had many people ask me when/where I will be open. I love these messages. It makes me so happy people are wanting to stop by and get some mac n cheese. I am going on my first break of the year so far, so I won’t be open until July 8th. I am going to Michigan with my grandpa to see family I haven’t seen in what feels to be ages.

There is a LOT of big events coming up. Serving food at the parade, county fair, Isanti fire works, street dance, etc. It’ll be my busiest month ever and I am a little nervous but excited.

In the meantime, I hope everyone enjoys the 4th of July. Celebrate the independence and be thankful we have had the opportunity to live in such an extraordinary country.

Open from 5-7 tonight at the bluebird park for the 2nd family entertainment night in Isanti

I’m here 5 hours early cause I was bored and hate waiting around. Might as well get setup early and get some prep done🙂

There will be bouncy houses, a band and a couple
